Seafood and fish are extremely popular for Christmas time in many parts of Spain, particularly in coastal regions and indeed Santiago de Compostela and Galicia. Clams Galician or ‘marinera’ style are a traditional dish for Christmas Eve but you are also quite likely to find them in menus along the Camino de Santiago.
Clams are absolutely delicious and very easy to cook. Here’s our Camino Christmas recipe:
What you will need:
1/2kgs of clams
2 garlic cloves
1 tablespoon of flour
1 glass of white wine
1 glass of fish stock
hot smoked paprika (or chilli flakes if you prefer)
You will start by chopping the onions and garlic very finely and browning them in a pot where you should covered them with olive oil. Add a spoon full of flour (this will help you thicken the sauce), the tomatoes (chopped in small cubes), salt and a touch of hot smoked paprika.
Let the mix cook at low heat for 15 minutes approximately, add the white wine and fish stock and the clams. Add the parsley and cover with a lid. Eat as soon as all the clams have opened. Serve with nice crusty bread or boiled potatoes.
