Filloas: A Traditional Camino Treat
If you’re walking the Camino de Santiago during Carnival season, you’re in for a delicious surprise! Galicians love filloas (also known as freixós), a thin, crepe-like pancake they enjoy in both sweet and savoury varieties. For centuries, people have made these traditional delights using ingredients like broth, pork fat, or even blood in savoury versions. Today, people commonly serve them with honey, sugar, lemon, or chocolate.

Ingredients for Filloas
To make approximately 10-12 filloas, you will need:
- 200g flour
- 400ml milk
- 100ml water
- Pinch of salt
- 1 tablespoon sugar
- 3 eggs
- Toppings of your choice: honey, lemon, sugar, whipped cream, chocolate spread, or maple syrup
- A non-stick pan
- Sunflower oil or butter to grease the pan
Method: How to Make Filloas
- Prepare the batter – In a large bowl, mix all the ingredients together until smooth. You can whisk by hand or use a blender for a lump-free consistency.
- Heat the pan – Lightly grease a non-stick pan with butter or sunflower oil and warm it over medium heat.
- Cook the filloas – Pour a small ladle of batter into the pan, tilting it to spread the batter evenly.
- Flip the pancake – When bubbles form and the edges start lifting, gently flip it with a wooden spatula. Cook for another minute until golden.
- Repeat – Remove from the pan, grease again, and continue until all the batter is used.
- Serve and enjoy – Top with your favourite sweet toppings and savour the taste of the Camino!
